This recipe features a number of healthy options and ingredients, without sacrificing that classic chocolate chip cookie flavour we all know and love. Ingredients (Makes 20 Cookies)
1/4 c non-hydrogenated margarine (I used Becel Vegan) Could also use butter.
1/4 c unsweetened applesauce
1 tsp vanilla
1/4 c NuNatural Stevia Baking Blend (or 6 packets of stevia…Truvia, Krisda (sold in Canada) etc)
1/3 unpacked brown sugar
1 c spelt flour (could also use whole wheat flour)
1/2 tsp baking soda
1/2 package of Semi Sweet Chocolate Chips (175 grams)
Pre-heat oven to 375 degrees. Cream together margarine, applesauce, stevia & brown sugar. Beat in egg and vanilla with whisk. Combine flour, baking soda and salt. Gradually blend into creamed mixture. Stir in chocolate chips. Using a measuring spoon (Tablespoon), drop dough onto cookie sheet lined with parchment paper (not wax paper). If you don’t have parchment, you may have to spray the baking sheet with cooking spray to prevent sticking. Bake for approx. 12 minutes. Makes 20 cookies.
